3 Yellow Squash or Zucchinis
½ white onion
4 cloves of garlic
5-6 white or small portobello mushrooms
½ bunch of Italian parsley
1lb of ground beef (can be substituted with ground turkey, chicken or pork)
2 hardboiled eggs
½ teaspoon salt
½ teaspoon pepper
½ teaspoon of ground cumin
1 cup of shredded sharp cheddar cheese
Olive oil
Direction:
Preheat oven to 350° F
Lightly oil a rectangular Pyrex or deep baking dish
Cut the yellow squash or zucchini lengthwise, including the stem
Remove the seeds, and with a tablespoon, spoon out the flesh of the squash into a bowl.
Dice the spooned-out squash into ½ inch pieces.
Dice the onion, mushrooms, parsley and garlic and add to the bowl of squash, drizzle with olive oil and set aside
Add a teaspoon of olive oil to a skillet of med-high heat, and add ground beef, or meat of your choice. As the meat begins to brown add cumin, salt and pepper.
Finish browning and allow to cool.
Once cool mix with squash mixture.
Dice hard-boiled eggs and stir into mixture.
Oil the squash shells inside and out and lay in the baking dish.
Fill each squash halfway with filling, and sprinkle with shredded cheddar cheese.
Finish with another layer of mixture and sprinkle with more cheese.
Drizzle with olive oil.
